No bake protein balls

• 100 g almonds
• 100 g apricots
• 2 teaspoon coconut oil
• 4 teaspoon rosehip powder
• 1 teaspoon ground ginger
• ½ teaspoon vanilla
• 1 teaspoon cinnamon
• ½ teaspoon chilli powder
• pinch of salt
Coating Mixture
• 1 teaspoon rosehip powder
• 1 teaspoon raw cocoa powder

1. Process almonds until fully ground. Add apricots and process until the mixture reaches a uniform consistency.
2. Add coconut oil and spices and process until fully combined (this may take some time.)
3. Knead dough into flat form, wrap and refrigerate 15 minutes or until mixtures starts to firm.
4. Roll into balls – about 1 Tbsp per ball.
5. Roll balls in coating mixture and keep refrigerated until ready to eat.
